Se4all Workshop in Rome; Diving into Food Science

Rome, January 25, 2024 —The event, a part of the Se4All project, funded by the European Union’s Horizon 2020 research and innovation programme, brought together leading experts and researchers in the field of food science. In the evening, the Se4All Science Cafe hosted by Prof. Marini provided an informal yet intellectually stimulating setting for discussions on the role of technology and data in modern food science.

The workshop objective is to explore cutting-edge techniques and analytical methodologies in food science, contributing to advancing knowledge and application of selenium biofortification in the dairy industry.

Overview: 

The workshop will be a platform for scientific exchange and discussion, focusing on advanced characterization techniques and data mining strategies for food science.

Objectives: 

  • To promote a comprehensive understanding of advanced characterization techniques and data mining strategies for food science and their significance in sustainable food applications.
  • To facilitate the knowledge exchange on advanced characterization techniques and data mining strategies for food science.
  • To explore the characterization of functional fungi grown on selenium-biofortified broccoli byproducts and the distribution and speciation of selenium in different parts of biofortified wheat by X-ray absorption spectroscopy.
  • To present plant proteases for the growth of biostimulants based on industrial wastes and some applications for the dairy industry in Ireland and (Argentina Interlaboratory System) and AI-Powered Solutions for a Sustainable Food system.

Outcomes: 

The workshop aims to promote collaborative research initiatives, ignite innovative ideas, and create an environment conducive to knowledge sharing in the field of advanced characterization techniques and data mining strategies for food science. Participants gained valuable knowledge on data collection, characterization, modeling and practical applications of advanced characterization techniques and data mining strategies to food science, contributing to the advancement of sustainable food solutions.
